During the toasting moment, the Cartesius Sushi specially created for PROVADA was served, a creation by MRP in collaboration with tAji the chef (ir. Masayuki Tajima). "We are delighted to present the Cartesius Utrecht Sushi with eel, a Dutch pride of flavor. In Japan, where Okinawa is one of the Blue Zones, freshwater eel (unagi) is used for special dishes or regional traditions and valued for its high nutritional qualities. In Utrecht's waterways, fish, including eels, are the main inhabitants. They are vital in keeping the water clean and healthy and they contribute to the biodiversity and livability of the city.” Read further https://www.mrpdevelopment.nl/provada-sushi-2025
